Jerusalem Artichokes - Winter Aconite
It is such a mild winter so it is still possible to dig up the Jerusalem artichokes, and the winter Aconites are blooming.
The Jerusalem artichokes are for this evenings soup:
350 g peeled Jerusalem artichokes cut in dices
250 g peeled potatoes in dices
2 leeks
2 stems celery
1 liter vegetable stock
Cook until tender and blend the soup. Pour in a little whole cream and spice to your taste. Served with crisp bacon crumble and a cheese toast is delicious.
