Apple Juice

The wind has harvested quite a lot of apples, so we had to start making apple juice.  🍎🍏🍎 We wash the apples and cut them in quarters and remove the bumped spots. Then they are shredded and pressed in the apple press. This  produces a lot of shredded, pressed apple residue to put in the compost heap, but luckily also some juice πŸ˜€ The juice is pasteurized (heated til it reaches 80 degrees) , and then I pour it in glass containers and freeze it. I have earlier bottled and sealed with a bottle cap, but some got moldy during winter, so now I freeze all the juice. It takes time to make apple juice, and then it is annoying to have to throw some of it out. Danish

Paradise Apple Schnapps

The paradise apple tree is loaded with fruit. Now it is time to make paradise apple schnapps. I think it is a bit earlier than usual, but this summer has also been exceptionally warm. The seeds  are brown , so I guess they are ripe. Wash the apples and cut off the top and bottom and then prickle the fruit thoroughly: Put the apples in a glass jar and fill with vodka. Let the apples soak in the vodka 2-3 months before you filter it. Danish

Applepie Cake

The summer apples are ripe and fall down with the bare touch of them. They are perfect for this cake. The recipe is from an American family member. I like to use shredded apples or squash in cakes because it prevents the cakes from getting dry. It also makes them suitable for freezing.  Sometimes they even get better and it is easier to cut slices when they are still a bit frozen Ingredients: 1 ¼ dl rapeseed oil / butter 2 dl sugar 1 egg 2½ dl flour 1 tsp baking soda 1 tsp cinnamon ½ tsp coarse salt ½ tsp ground nutmeg 1 / 8 tsp ground cloves 1 tsp vanilla sugar 5 dl shredded apple 1 ¼ dl chopped hazelnuts Stir everything together and bake at 200 degrees for 40-45 minutes Danish

Quince Tree, Filippa and Rhododendron

Almost every day has its own flowers. Filippa Quince Tree ( Cydonia oblonga) We haven't had fruit on the Quince Tree yet, but with all the fine flowers I guess there will be some this year.   The apple trees are also blooming now, and this year lots of flowers on the Filippa Apple Tree. Paradise Apple and Snowball tree

Flower - Paradise Apple Blossoming Paradise Apple Some of the fun stuff of having a large garden, are the surprises that sometimes occurs. This Paradise Apple is self-sown, and not from the Paradise Apple already in the garden, when we bought the house. It has smaller, different apples and is not yet in bloom. So this is kind of a bonus tree - thanks to the birds πŸ’—πŸ¦ , and it has it's finest color right now. There are numerous sorts and colors, but all of the malus family. I use the apples for jelly and schnapps: Paradise Apple Schnapps paradise apples Rinse the apples. Cut the stem and the blossom end and pierce the apples . Garden - Apples

We have many different apple trees in our garden. Two of them are special though, because they are self-sown. One grew up very close to the trunk of a pine tree. We discovered it one year when apples lay on the ground. Nice surprise. It is one of the best apples to save for winter - actually the sort that last the longest. The  taste is really good - kind of a mixture between Cox Orange and Ingrid Marie. Danish
