Homemade Garlic Powder

Image
I have previously blogged about garlic . These are harvested from the ones I have planted in clusters. They don't get very big, but they are easily peeled because they haven't yet made cloves.I use my Bamix  SliceSy to cut them in thin slices, and then they are spread on baking paper: I dry them in the oven at about 60 degrees. These took about 6 hours (hot air). When they are completely dry I grind them in my Bamix Wet and Dry Mill, and the powder is poured into a glass container: Danish

Mixed Spices - Ranch Seasoning Mix Substitute

Image
I have found a recipe on the internet, I want to try. One of the ingredients is  Ranch Seasoning Mix. I don't suppose it is available in Denmark, but you can make a substitute yourself. That meant I had to start dehydrating herbs. Parsley, dill and chives/onion tops were dried in the oven at 70 degrees hot air until they were dehydrated. I made onion powder with finely chopped onions, which were also dried in the oven. When they were completely dry they were blended to powder. I shall have to do the same with garlic, but I haven't made that yet. Recipe for  Ranch Seasoning Mix: 2 tbsp dried parsley 1½ tsp dried dill 2 tsp garlic powder 2 tsp onion powder 1 tsp ground black pepper 1 tsp dried chives/onion tops 1 tsp salt Everything is mixed together, and blended if a finer consistency is wanted. 3 tbsp of this mixture equals a packet of Seasoning Mix. It is a bit cumbersome to make yourself, but anyhow quite nice  when you have the herbs in your...

Garden - Garlic

Image
Many years ago a colleague gave me some ecological heads of garlic. I split them in cloves, planted them in my garden and ever since we have been well provided with garlic. Every year I take the finest heads, split them in cloves and plant them in September / early October. The ones on the picture was planted late September. They are visible now and ready to grow up big next year. In spring some of the harvested and dried garlic heads begin to look less appetizing and they have begun to bud. I separate in cloves and plant them very close in a cluster. That gives you fresh garlic very early (also the following year if you don't use it all) and you can use the top as well. Danish
