Mexican Sukini Cake

 Mexican Sukini Cake: 3 eggs 2½ dl vegetable oil 5 dl sugar 5 dl coarsly grated squash with the peel on or you can use grated butternut squash 5 dl flour 1/4 tsp baking powder 2 tsp baking soda 1 tsp salt 2 tsp vanilla sugar 3 tsp cinnamon 2½ dl coarsly chopped walnuts Mix everything together and bake approximate 1 hour at 200 degrees Celcius.

Fig - Almond Cake

Ingredients: 50 g melted butter 2½ dl   almonds (do not skin) ½ dl cane sugar and 2 tbsp coarse sugar to sprinkle over the figs before baking ½ dl flour ½ tsp baking soda ⅛ tsp cinnamon ⅛ tsp coarse salt 3 eggs 2 tbsp honey ½ tsp  almond extract 10 -12 ripe  figs (stem removed) Grind the almonds to a coarse powder and mix with all the dry ingredients. Melt butter and honey together and let cool a bit before adding three eggs. Whip together and add the almond extract. Then add all the dry ingredients and stir well  until combined. Pour the batter in a baking pan ( mine is a silicone dish, so no need to butter it) and place the halved figs on top. Sprinkle with coarse sugar and bake for 30 minutes at 200 degrees. Danish

Cake with Fresh Figs

¾ dl rapeseed oil 2 dl cane sugar 1 tsp vanilla sugar 3 eggs 5 dl flour 1 tsp baking soda 1½ tsp cinnamon 2 dl milk 1 dl coarsely chopped hazelnuts 2 dl fresh figs cut in small dices  - stem removed Stir everything thoroughly together except the figs which is put in the dough at last. Applepie Cake

The summer apples are ripe and fall down with the bare touch of them. They are perfect for this cake. The recipe is from an American family member. I like to use shredded apples or squash in cakes because it prevents the cakes from getting dry. It also makes them suitable for freezing.  Sometimes they even get better and it is easier to cut slices when they are still a bit frozen Ingredients: 1 ¼ dl rapeseed oil / butter 2 dl sugar 1 egg 2½ dl flour 1 tsp baking soda 1 tsp cinnamon ½ tsp coarse salt ½ tsp ground nutmeg 1 / 8 tsp ground cloves 1 tsp vanilla sugar 5 dl shredded apple 1 ¼ dl chopped hazelnuts Stir everything together and bake at 200 degrees for 40-45 minutes Danish

Squash Brownies

There are lots of squash at the moment, so it is time to find good use for them. This is a  brownie-variant with squash. It turned out very well and keeps fresh and  juicy because of the shredded squash. Ingredientr: 4 dl shredded squash 2 dl rapeseed oil 4 eggs 3 dl cane sugar 1 tsp cinnamon 1½ tsp baking soda 1 tbsp vanilla sugar 1 dl graham flour 3 dl flour 3 tbsp cocoa powder ½ tsp coarse salt Stir everything  together and put the dough in a little baking pan lined with baking paper. Blackberry Pie with Tosca-topping

Now is time for blackberries. The warm weather has made for an early harvest, and lots of berries That means blackberry pie 😊🌞 Ingredients: Shortcrust for bottom crust 125 g butter 3 Dl flour ½ Dl sugar 1-2 tbsp water Stuffing: 400 g blackberries 1 tbsp potato flour Top: 75 g butter 1 Dl sugar 2 tbsp flour 75 g coarsely chopped almonds 1 egg Combine butter, flour and sugar and add water little by little until the dough is smooth but not sticky. Bake in a  i pie dish for  10-12 minutes at 200 degrees. Stir the potato flour and the balckberries  gently together while the shortcrust is baking. Make the Tosca-top. Melt butter , sugar, flour and almonds together. Take it off the heat and let cool a bit before adding the egg.Stir well together. When the bottom crust is ready, pour in the berries and then distribute the Tosca-topping evenly over the berries. Bake  20 minutes at  200 degrees. Servere with whipped cream Danis...

Chocolate Cake with Cherries

The recipe for the dough is the same as in African Country Road Cake. Instead of the  frosting I use 300 g pitted cherries. Morello Cherries, African Country Road Cake and Walnut Schnapps

The morello cherries are ripe now, and there are lots of them this year. They go very well with chocolate cake, so I made African Country Road Cake: African Country Road Cake 2 eggs Stir the ingredients together  Bake ½ hour at 180 degrees. Frosting: Melt the butter and combine with the rest. Spread it on top of the cake. 2 Dl sugar 1 Dl milk 2½ Dl flour 2 tsp baking powder 1 tsp  v anilla sugar 2 tbsp cocoa powder 1½ Dl rapeseed oil Frosting: 100 g butter 2 Dl icing sugar 8 tbsp coffee 2 tbsp cocoa powder 4 Dl desiccated coconut I also made walnut schnapps because a big branch fell of the tree. Orange Cake

My newly made orange jam was to be tested in a cake. I used the same recipe as I used for the lemon cake , but replaced the lemon balm and lemon juice with 4 tbsp of orange jam. Orange Cake 2 eggs Stir everything together and bake for ½ hour at 200 degrees. When the cake has cooled you make the icing. Pour lemon juice little by little in the icing sugar while stirring. Lemon Cake

Lemon Cake Again it was nice to be able to pick lemon balm  in the garden. I had bought organic lemons, and they don't keep for very long, but usually it is a better buy to take three at a time. Sometimes I freeze the juice in ice cube trays, but this time I  used some in a lemon cake. Lemon Cake 2 eggs Stir everything together and bake for ½ hour at 200 degrees. When the cake has cooled you make the icing. Pour lemon juice little by little in the icing sugar while stirring. Lemon Balm and Muffins

Lemon Balm (melissa officinalis) Now the Lemon Balm is ready to be used. It grows willingly in the garden and sows itself in various places, so one of my grandchildren (age 7) could bake my favorite muffins: Muffins with Lemon Balm and Walnuts  1 Dl coarsly chopped walnuts  Stir butter and sugar until soft and then add eggs. and stir again. Add flour, baking soda , walnuts and lemon balm and  stir till combined. Put in muffin forms and bake at 225 degrees for 20 minutes. 100 g butter 1 Dl sugar 2 eggs 2 Dl flour 1 tsp baking soda 1 Dl finely chopped lemon balm He didn't think it was quite enough, so we made another portion. This time without walnuts and lemon balm, but we used finely sliced rhubarbs and chopped chocolate. That was fine as well. I didn't have enough butter to bake so we replaced the 100 g butter with 1 Dl rapeseed oil. That was ok. 👍😋 One of each Danish

Mini-Cakes for a Buffet

Some time ago I bought some small silicone-molds in Søstrene Grene, and now was the time to use them. I made chocolate cakes and walnut pies. The recipe for walnut pies is already on the blog , only they were the bigger size, The small ones should be baked only once. You put some dough in the mold and then the filling. I baked at 200 degrees for 12 minutes - ( 6 minutes with the fan on, and 6 minutes  with the fan and lower heat on). This is the result. The cakes are on a place mat made of English millennium stamps. They are glued on an A3 sized paper and then laminated. And  now a recipe for the chocolate cakes: Mini-chocolade cakes 36 PCS 100  g dark chocolate Melt the butter at low heat in a saucepan and put the chocolate in the saucepan as well and let it melt. Blackcurrant-Almond Cake

I freeze blackcurrants in plasticbags with 3 Dl berries in each bag, ready to use in this cake. I felt like baking it this weekend. I took the blackcurrants  out of the freezer the day before use, and put it in the refrigerator to thaw. Everything is mixed together except the  blackcurrants which are carefully put in the dough when you have finished mixing it. The cake keeps fresh for a long time due to the berries, but always disappears  before that even is an option  😋 It won't harm the cake to serve it with some whipped cream. Recipe: Blackcurrant-Almond Cake 2 Dl almonds Almonds (not peeled) is chopped finely  Everything is stirred thoroughly together (I use my mixer) except the blackcurrants which you gently stir in the dough, when it is ready. Brownies - Old Cookbooks

My recipe for brownies originates from my very used and worn cookbook: We bake from  Politiken Handbook series. It was published in 1960. In the same series has been published: What to drink, We Cook, Sweet and Sour. They are among the publishers' books for female readers, as featured on the cover page. Since it was so worn out, I have also bought the 4th edition from 1969 antiquarian. It is without the stripes, but still for female readers. A bit has happened since 1960/69. I do  think the target group will be slightly extended 😀 Thinking about this progress made my day, but it was sadly ruined by a notice on Facebook from Dansk Folkeparti. It was a vote about Somali women, whether they were an enrichment or a burden. Then I felt like living in the 30th - 40th. First I thought it was Fake News, but when I went to their website it showed unfortunately to be true. Danish Brown Cookies (Brunkager)

Brown cookies is an absolute must at Christmas and in December at our house. Brown cookies are said to have roots back in the Middelage - I have "only" baked them a little more than 50 years 😃 . I make  a portion dough and when it has cooled  and is solid, I part it in 4 pieces and make them into rolls and put each in a plastic bag and put them in the freezer. Then I can bake them once in a while, and they will stay crisp. It is also a great advantage they are frozen, because that makes it much easier to cut very thin slices. If you cut too thick slices the cookies will not be crisp. Garden - Walnuts

One of autumns great pleasures is collecting walnuts - especially as we got a huge amount from our daughter and son in law. We planted  a  walnut tree shortly after we had bought our house (1975), but this year the  amount of nuts was very limited and they were all consumed right away. The tree in my daughters garden is very old and always gives bucketfull of nuts. So we got a lot from her and I shell them and dry them, and I guess I will be provided with walnust the whole of next year😃. I crack the nuts and put the nut kernels in one layer on a dish towel . I keep them in room temperature for a couple of days. I then place them in cloth bags and hang them on a clothesline  - still in a place with room temperature. Before I made some cloth bags I used  pillow cases, and that works fine as well  A couple of times a day I give the bag a little shake.
