Lemon Balm and Muffins

Now the Lemon Balm is ready to be used. It grows willingly in the garden and sows itself in various places, so one of my grandchildren (age 7) could bake my favorite muffins:

Muffins with Lemon Balm and Walnuts 

1 Dl coarsly chopped walnuts Stir butter and sugar until soft and then add eggs. and stir again. Add flour, baking soda , walnuts and lemon balm and  stir till combined. Put in muffin forms and bake at 225 degrees for 20 minutes.
100 g butter
1 Dl sugar
2 eggs
2 Dl flour
1 tsp baking soda
1 Dl finely chopped lemon balm

He didn't think it was quite enough, so we made another portion. This time without walnuts and lemon balm, but we used finely sliced rhubarbs and chopped chocolate. That was fine as well. I didn't have enough butter to bake so we replaced the 100 g butter with 1 Dl rapeseed oil. That was ok. 👍😋
